Jack founded the Michelin Guide ‘Midsummer House-, Cambridge’s paramount restaurant. This dining experience is hidden amongst the grassy pastures and grazing cattle of Midsummer Common and perched on the banks of the River Cam.
Although a little dated now e.g. refers to John Dory or monkfish as cheap, the recipes are superb. Lassalle knew and encouraged Elizabeth David, so that is the standard this book is at. It does not mean that the recipes are complex as many definitely are not, rather the quality is high. I have watched many TV programmes where the TV chefs have used the recipes. I have also watched Rick Stein try to recreate his version of Omelette Arnold Bennett and to be honest it is just not in the same league! It is a must have book for anyone who enjoys fish!
