Review: I’ve used this book for years as my primary guide for all aspects of sushi making, from preparing Japanese rice to makizushi, nigirisushi, and every filling ingredient you can think of, as well as many other recipes from Japanese cuisine. I just sent a copy to my daughter who is beginning to learn about the subject. I highly recommend this book.
