Please view our photographs. Mrs A B Marshall’s Larger Cookery Book of Extra Recipes (1891) is a highly sought-after Victorian antiquarian cookbook. Written by Agnes Bertha Marshall, the famous “Queen of Ices” who revolutionized frozen desserts, this book represents a seminal moment in British culinary history. This is an authentic 1891 First Edition published by Marshall’s School of Cookery in “Good” condition that holds significant value for collectors of historic gastronomy. Based on current antiquarian book market data, a first edition copy in good condition typically ranges in value from £100 to £180.

  • Later reprints (such as the 1902 edition) in excellent, professionally rebacked condition sell for around £108.
  • A true 1891 first edition in its original cloth binding can command the higher end of that range, approaching £150 – £180, provided it retains its frontispiece portrait and the original pages of commercial advertisements at the back.

Key Factors Impacting Value

  • Completeness: Ensure the book still contains its engraved portrait frontispiece of Mrs. Marshall and the original publisher’s advertisements at the rear (often around 40 pages). Missing advertisement pages reduce the value to collectors.
  • Binding State: “Good” condition for a book of this age usually means some shelf wear, minor fraying at the spine edges, or light foxing (age spots) on the pages. If the binding is tight and original, it maintains peak value. If it has been rebound or heavily taped, the value drops.
  • Historical Significance: Agnes Marshall was a true culinary entrepreneur, inventing a patented ice cream machine and even suggesting the use of liquid gas to freeze ice cream. Books published directly by her school are highly prized compared to mass-market domestic manuals of the same era (like basic editions of Mrs. Beeton).

NOTE: This is an original  book from the library gathered by the famous Cambridge Don, computer scientist, food and wine connoisseur, Jack Arnold LANG. Note: Jack founded the Michelin Guide ‘Midsummer House’- Cambridge’s paramount restaurant. This dining experience is hidden amongst the grassy pastures and grazing cattle of Midsummer Common and perched on the banks of the River Cam.

In 2008, Jack was one of the co-founders of the Raspberry Pi Foundation, alongside other members of the Department, and acted as the Foundation’s Chair. The project’s original goals were modest: to build and distribute low-cost computers for prospective applicants to our Computer Science degree. Initially the project was a “success disaster”, as Jack would say, as demand far outstripped the low-scale manufacturing plans. Ultimately the Raspberry Pi became the UK’s most successful computer with more than 60 million sold to date. Jack was drawn to the educational possibilities of the Raspberry Pi, its potential uses in emerging economies and the way it could support self-directed learning.
