Jack founded the Michelin Guide ‘Midsummer House’- Cambridge’s paramount restaurant. This dining experience is hidden amongst the grassy pastures and grazing cattle of Midsummer Common and perched on the banks of the River Cam.
This is an old fashioned recipe book. I have seen it described as “nouvelle cuisine” and while there are certainly elements of this in the book, I would say that it is better described as classic French cuisine. If you ever watch “Masterchef The Professionals” on telly and have seen the bit where Michel Roux Jr asks the contestants if they are classically trained – well, this book contains those recipes to which he is referring. This is not the simplest book to follow. Many of the recipes are quite complex and require and certain degree of knowledge/experience to perfect, but good god the food is superb! It is well worth having this in you book collection at home for those occasions that you want to cook something really special.
